When I was a child, we would call my mother’s cooking ‘Experiment Show!’. Her cooking tasted different from all of our relatives and friends’ cooking. She could never bring herself to fry bhindi until it is crisp, or saute vathakuzhambu (a spicy tamarind-based curry) until the oil separated from the gravy. Instead, she would always try to do her best to give us the healthiest of foods.
As kids, this meant that we wouldn’t get pooris as often as we would kanji or porridge, but her dishes tasted absolutely amazing every single time. When my sisters and I were old enough to help her out in the kitchen, she let us in on her secret.
She said that she never follows a recipe by the book. Instead, she has formulas in her head that she uses to create her own recipes. Ways to make any dish taste great. For example, if you want to make any vegetable sabzi taste fresh, just squeeze a lemon on it!
We grew up learning cooking without a recipe book, using her secret formulas. I absolutely loved it! When I was studying to become a doctor, I have survived for five years cooking my own food thanks to her training. In fact, I wanted to become a chef before I became a doctor! As a plant based physician, I kind of dabble in both now!
After we started the Healing With Food workshop, a lot of people came back to us and said they were finding it difficult to understand how to approach cooking. So we decided to take up the challenge. We took our mother’s formulas and the latest nutrition research, combined the two, and designed a workshop where anyone could learn to become a Plant Based Chef at home in just five hours, even if their prior cooking experience is limited to just boiling water!
It took us one year of research and experimentation, and we finally had a breakthrough last year with our first cooking workshop. Since then, we have had a couple of major upgrades to the workshop and it has evolved into the ‘Plant Based Chef’ Cooking Workshop! Over the last four years, using the formulas that we teach at the workshop, we have invented eight to ten different dishes every single day! We have almost never eaten the same dish twice. That comes up to more than 10,000 different dishes. Wow! Imagine that!
