Instructions
  1. Wash all vegetables well.
  2. Cut orange pumpkin (with peel) into big pieces. Chop tomatoes.
  3. Boil pumpkin, tomato with kokum, dates syrup, miso paste and very little water until it is well cooked. If you add more water, the curry will be too watery.
  4. Dry roast bengal gram dal, urad dal, and fenugreek seeds separately. Powder them along with other masala ingredients and add to boiling pumpkin mixture.
  5. Switch off the stove, Grate or coarsely grind a 2 inch piece of fresh coconut and garnish.
  6. Add chopped coriander leaves and mustard seeds on top. Dry roast the mustard seeds if you prefer, however, this is not required.
  7. Serve with millet or unpolished rice.
