Brinjal Coconut Curry / Badnekai Saaru

Ah! Brinjal Coconut Curry and I go a long way back. I remember stuffing my face with this curry, wrapped in warm fluffy chappatis, growing up.

Generally the Brinjal Coconut Curry, much like other side-dishes would be super oily. The Brinjal would typically be fried in oil and dunked in an equally oily gravy.

Learning about the powerful corelation between refined food and lifestyle diseases led us to upgrade our lives to a Whole Food Plant Based lifestyle. We missed our favourite curries and gravys, but only until we figured out how to make them with healing ingredients! We also learnt additional methods of cooking that best preserve and enhance nutrition.

Follow this recipe and make some super yummy Brinjal Coconut Curry full of healing ingredients AND super yummy! It goes well with unpolished rice, millet, or millet rotis, so pick your favourite cereal and tell us how you like it.

Instant Coconut Curd

I used to love curds. I could do without any dairy product – except for curds. When I found out how deadly curd is for cows and for us, I figured, I’d be better off without it.

Over time, my craving for curds also reduced, though there were still days when I dreamt of that bowl of white yumminess. That is, until I found this recipe.

Can you imagine making curds in less than 5 minutes?

Imagine this, a lazy Sunday evening, book in hand and a plate with crispy, hot-from-the-tava ragi dosa with a dollop of Fresh Mint Chutney! Often, this aromatic, lemony chutney is an all-time favourite side dish. In our case, it’s also sometimes the main dish! We use only the best ingredients in this recipe just like all our others. Ones that will heal and keep you in the best of health.

Mint is one of the most diversely used herbs. In Indian cuisine alone, there are at least ten dishes that absolutely can’t do without Mint and we aren’t complaining.  One of them is, of course, Fresh Mint Chutney. The fresh hit of mint and lemon under the silky warm tones of coconut blends rather perfectly to make this simple chutney a mouth-watering treat. It completes almost any dish, most of all, some piping hot Ragi Dosa and some aromatic Pulav.
